Weed Butter Carrot Cake

The Carrot cake is a very popular dessert especially in northern countries, but is highly recommended for people with intense sports activities. Combined with cannabutter, it becomes a great way to relax after a day at the gym.

2 cups sugar
1 cup of melted cannabutter or cannabis oil
3 eggs
2 tsp of vanilla sugar
3 / 4 cup yogurt
2 cups grated carrot
1 cup flaked coconut
1 grated pineapple
2 cups flour
2 tsp of baking powder
2 tsp of ground cinnamon
½ teaspoon salt
1 cup ground nuts
1/2 cup of butter
250 g(10oz) cream cheese
4 cups powdered sugar

- In a bowl mix the sugar, oil, eggs, 1 tsp of vanilla sugar and yogurt. Add the carrots, coconut, another tsp of vanilla sugar and pineapple.  

- In a separate bowl mix flour, baking powder, cinnamon and salt then easily mix with the carrot mixture.  
- Add the peanuts.  
- Spread mixture into pan.  
- Bake for 45-55 minutes at aprox. 320°F(160°C). Allow to cool.  
- Meanwhile in a different bowl mix the butter, cheese, 1 tsp vanilla sugar and 1 tsp powdered sugar until the mixture is homogenous and soft.

- Add the cheese mixture over the cake while it still lies in the pan, then cut into suitable size pieces.
